Description

These hobbit-sized treats are inspired by Bilbo's Seedcakes from the Hobbit and Lord of the Rings book series.

Ingredients

Instructions

  1. Preheat the oven to 180°C and grease your muffin tin. We used a 12-hole, standard sized muffin tin.

  2. Use a handmixer to beat the butter and sugar in a mixing bowl, until light and fluffy. Add the orange zest, orange juice and the marmalade. Continue beating, until well-combined.

  3. Add the eggs one at a time, beating well after each addition. Sift in the flour, baking powder and a pinch of salt and fold it through with a large spoon, until just combined. Stir in the poppy seeds.

  4. Divide the mixture evenly between the muffin holes. Bake for 15 mins, or until golden. Surface should bounce back when lightly pressed. Remove from the oven and leave to cool in the tin for 5 mins, before flipping the tray upside down onto a wire rack to cool the cakes completely.

  5. Meanwhile, make the icing. In a mixing bowl, whisk the milk and icing sugar until smooth.

  6. Drizzle a spoonfull of the mixture onto the centre of each cake. Then sprinkle some of the extra poppyseeds on top.
