Description

These buttermilk scones are the perfect vehicle for some clotted cream and jam.

  1. Preheat oven to 200°C. Place flour and butter into a food processor. Then pulse until there are no lumps of butter left.

  2. Add the sugar and pulse again until combined, before pouring the mixture into a large bowl.

  3. Beat the egg and buttermilk in a separate bowl or jug. Set 1tbsp aside for the egg wash. Add the vanilla extract and the rest of the buttermilk mixture to the flour mix. Use a knife or spatula to combine all ingredients to form a dough. The dough should be shapeable, but moist.

    If the dough is too wet, add some flour to make it less wet. If its too dry, add some more milk.
  4. Tip the dough out onto a floured surface. Knead the dough until smooth. Then use a rolling pin to roll-out the dough until its about 1 inch thick.

  5. Using a round cutter, cut out 6 – 8 scones and place on a lined baking sheet. Brush with the egg wash.

  6. Bake scones in the oven for 12 - 15 minutes until golden and well rise. Leave to cool.

  7. Serve with clotted cream and jam or any toppings you wish. Enjoy!
