These buttermilk scones are the perfect vehicle for some clotted cream and jam.
Preheat oven to 200°C. Place flour and butter into a food processor. Then pulse until there are no lumps of butter left.
Add the sugar and pulse again until combined, before pouring the mixture into a large bowl.
Beat the egg and buttermilk in a separate bowl or jug. Set 1tbsp aside for the egg wash. Add the vanilla extract and the rest of the buttermilk mixture to the flour mix. Use a knife or spatula to combine all ingredients to form a dough. The dough should be shapeable, but moist.
Tip the dough out onto a floured surface. Knead the dough until smooth. Then use a rolling pin to roll-out the dough until its about 1 inch thick.
Using a round cutter, cut out 6 – 8 scones and place on a lined baking sheet. Brush with the egg wash.
Bake scones in the oven for 12 - 15 minutes until golden and well rise. Leave to cool.
Serve with clotted cream and jam or any toppings you wish. Enjoy!
