Inspired by the delicate, layered pastry dessert the Bridgerton family made specifically for Lord Samadami's visit in Season 3.

Making the Pastry Layers

  1. Preheat oven to 190°C. Line a baking tray with baking paper.

  2. Unroll the puff pastry and cut into 3 evenly-sized pieces.

  3. Cut a piece of baking paper large enough to cover the baking tray; and place on top of the puff pastry. Then place a second baking tray on top and add some baking beans.

    The weight of the tray and baking beans will ensure that the puff pastry stays flat and doesn't rise too much.
  4. Bake the puff pastry for 15 - 20 minutes before placing the puff pastry slice onto a cooling rack with the golden side (bottom side) facing upwards.

  5. Repeat for the remaining two pieces of puff pastry.

Making the Vanilla Cream

  1. Using a handheld mixer, whip the double cream, vanilla paste and sugar until stiff peaks form. Fill a piping bag with the whipped cream.

Assembling the Mille-Feuille

  1. Cut each piece of puff pastry into 5 even slices, so you have a total of 15 slices.

  2. Pipe cream onto 10 of the slices. Top each of the 10 cream-covered slices with quartered strawberries and some raspberries.

  3. Stack two of the cream-covered slices on top of each other. Then top with a plain slice. Repeat for remaining slices. 

  4. Keep refrigerated until ready to serve. Before serving, dust with icing sugar.
