Ingredients
For the dough
250g All-purpose, plain flour
3.5g Fast action dried yeast
1tbsp White sugar
180mL Warm water
1tbsp Olive oil
1/2tsp Salt
For the toppings
80mL Pasata or pizza sauce
100g Mozzarella, shredded
40g Cheddar, shredded
Instructions

Combine the yeast, sugar and warm water in a large mixing bowl (or the bowl of a standmixer). Let the mixture sit for 5-10 minutes until the top is frothy.

Once frothy, add the flour, salt and oil to the yeast mixture.

Using a handmixer (or a standmixer) with dough hook attachments, mix on low for about a minute until the ingredients are combined. Then increase the speed to low-medium and keep mixing until a smooth dough forms after approximately 5 minutes. The dough should bounce back when poked.

Shape the dough into a tight ball and place it in a lightly oiled large bowl. Then cover the bowl with plastic wrap and place in a warm place. Let it rise for about 1 hour, until the dough has doubled in size.

Preheat the oven to 220°C.

When the dough has doubled, remove it from the bow and shape it into a 30cm/12” circle on a lightly floured surface, leaving a thicker rim around the outside edge.

Transfer the dough to a lined baking tray (and reshape if needed).

Top the base with sauce, Then sprinkle on the cheeses.

Bake for approximately 15 minutes or until the crust is golden brown and the cheese is molten and bubbling.
